Gray Squash Sautee with Red Peppers and Onions

My second vegetable side dish of the week worthy of the lens – gray squash (also known as Mexican Zucchini) with red peppers and onions.

This recipe is very simple and easy to make.  It can be a light summer dinner or a health and flavorful side dish.

Gray Squash Sautee with Red Peppers and Onions-6

Ingredients:

3 medium gray squash
1 medium red pepper
1 medium onion
2 tbsp extra virgin olive oil
2 cloves of garlic
splash of orange juice
salt and pepper

Cook time: 15 minutes
Serves 4

Slice the zucchini about 1/3′ wide.  You can quarter it, or slice it, whatever you prefer.

Dice the red peppers and onions.

Put olive oil in pan and sautee the red peppers and onions. Keep the zucchini for the last step.

Cook until the onions are translucent and carmelized.

Next in is the gray squash. Keep tossing the zucchini around so it gets a nice flavor coating from the red peppers and onions that have carmelized.
